This has been a busy week! I was asked to help with an Enrichment activity on Gardening (in particular, Harvesting) to be held in my yard this past week. I have spent the several weeks putting together this spreadsheet with a lot of information on what to do with the yummy vegetables that we grow. Hopefully this will be a good reference! Note: This was made for my altitude (4000-6000 ft). If you use this as a reference, and live at a different altitude, you would need to adjust times, and pressures. Garden Harvest 4000-6000 ft

Build a small supply of food that is part of your normal, daily diet. One way to do this is to purchase a few extra items each week to build a one-week supply of food. Then you can gradually increase your supply until it is sufficient for three months. These items should be rotated regularly to avoid spoilage.
